Pavlova is a controversy dessert! haha. Some say it was from Russia but I also heard it was originally from New Zealand and Austria. Regardless of its origin, Pavlova has surely won the hearts of many. We can find it everywhere in any continent!


A Pavlova bake well is a meringue that is crunchy on the outside and chewy, marshmallow like texture inside. Please read the tips down below to make it right. Meringue is sweet, hence it should always pair with berries to balance the taste. Sweet and sour also creamy from the whipping cream.

TIPS ON MAKING THIS RIGHT
  • Make sure the bowls and equipment use are clean from oil. You can wipe it with vinegar before hand to eliminated any oil.
  • Make sure egg white is in room temperature.
  • Use fresh eggs.
  • Pour the sugar gradually, so they can dissolve evenly.
  • Use cream of tartar for beaten egg whites. It help increase their stability and volume.
  • If you cannot get cream of tartar you can replace it with 1/2 tsp vinegar or lemon juice.
  • To get white shinny white pavlova use vanilla sugar or powder.
  • If you cannot get vanilla sugar or powder. Yes you use vanilla essence or paste but add it last with the corn starch.

FULL RECIPE
Mini Pavlova
Ingredients
  • 120g egg white ( 4 medium egg) | 120g telur putih ( 4 telur sederhana)
  • 150g caster sugar | 150g gula halus
  • 1/4 tsp cream of tar tar | 1/4 sk krim tar tar
  • 1 tsp corn flour | 1 tsp tepung jagung
  • 1 tsp vanilla sugar/powder | 1 tsp gula/serbuk vanilla
  • 250g whipped cream | 250g krim putar
  • fruits | Buah-buahan
Instructions
  1. Preheat the oven at 100C. | Panaskan oven pada suhu 100C.
  2. Beat the egg white until frothy. | Pukul telur putih hingga berbuih.
  3. Add in the cream of tar tar. Gradually pour in the sugar. | Masukkan krim tar tar dan gula sedikit demi sedikit.
  4. Beat the egg white mixture until it soft peak . Add in the vanilla sugar/powder. Keep beating until it stiff peak. | Pukul campuran telur putih hingga "bertanduk lembut". Masukkan gula/serbuk vanilla. Terus kan pukul hingga ia " bertanduk kental"
  5. Sieve the corn flour into the meringue and mix well. | Ayakkan tepung jagung dan gaul rata.
  6. Pipe the meringue onto parchment paper . | Paipkan meringue ke atas kertas minyak.
  7. Bake at 100C for 80 minutes. Turn off the oven, and let it cool completely inside the oven. | Bakar pada suhu 100C selama 80 minit. Tutup api, biarkan ia di dalam oven hingga sejuk.
  8. Whisk the whip cream until fluffy. | Pukul krim putar hingga gebu.
  9. Pipe the cream into the meringue, decor it with fruits. | Paipkan krim putar dan hias dengan buah buahan.
